Tomato Soup with Fresh Mozzarella
- 8 oz. Sorrento® Fresh Mozzarella
- 1 cup Long Grain Rice
- 1 Onion
- 1 tbs Butter
- 3 cups Tomato Juice
- 2 cups Vegetable Broth
- Basil, chopped
- 1 pinch Sugar
- Salt & Pepper, to taste
- Cook the rice as instructed on the packet. In the meantime, peel and finely chop the onion, gently fry in a saucepan with the butter and then add the tomato juice and the vegetable broth.
- Add the basil and the rice, which you have drained and seasoned with salt, pepper and sugar.
- Cut the fresh mozzarella into cubes; at the last minute, before serving, distribute it over the soup. Delicious with crunchy herb bread.
