Ingredients
- 3/4 cup Sorrento® Mozzarella, shredded
- 1/2 cup Parmesan (Grated)
- 1 lb. Spaghetti
- 3 tbs Olive Oil
- 2 tsp Garlic, minced
- 2 cups Tomatoes, diced
- 1 cup Zucchini, chopped
- 1 tbs Salt
- 1 tbs Fresh Parsley, chopped
Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10-12 minutes or until al dente; drain.
2. While the pasta water is boiling, in a large skillet over medium heat, briefly saute garlic and zucchini in oil. Stir in tomatoes and sprinkle with salt. Stir in parsley, reduce heat and simmer 5 minutes more.
3. Toss hot pasta with tomato mixture, mozzarella and Parmesan cheese.
