Chicken-Cheese Stuffed Pitas
- 1 Sorrento® Ricotta
- 1 cup Chicken, chopped
- 1/2 cup Green Onions, sliced
- 1/2 cup Sweet Red Pepper, chopped
- 2 1/2 can Black Olives, sliced
- 2 tbs Mayonnaise
- 3 Pocket Pitas, cut in half
- Leaf Lettuce
- Salt, to taste
- Ground Black Pepper, to taste
Combine ricotta cheese, cooked chicken, onion, red pepper, olives, mayonnaise, salt and pepper. Blend well. Line pita bread pockets with lettuce. Fill halves evenly with chicken mixture.
